Create festive Jack o' Lantern candy apples using Betty Crocker® icing for a spooktacular Halloween treat!
Ingredients:
  • 8 medium apples
  • 8 cinnamon sticks (6 inch) or craft sticks (flat wooden sticks with round ends)
  • 2 1/2 cups granulated sugar
  • 1 cup water
  • 3/4 cup light corn syrup
  • 1 teaspoon orange paste food color
  • Powdered sugar
  • 2 oz black fondant, if desired
  • 1 tube (4.25 oz) Betty Crocker™ green decorating icing
Instructions:
  • Prepare a cookie sheet with parchment paper. Wash and dry the apples, then remove the stem and blossom ends. Insert a stick into the stem end of each apple.
  • In a 3-quart heavy saucepan, combine granulated sugar, water, corn syrup, and food coloring. Bring to a boil over medium-high heat. Boil without stirring for 15 minutes until it reaches 300°F on a candy thermometer or until a small amount dropped into very cold water forms brittle threads. Be vigilant to prevent burning. Remove from heat and let it sit until bubbling ceases.
  • Coat each apple in the warm sugar mixture, ensuring full coverage while allowing any extra to drip off. Then, place the apples on a cookie sheet and let them sit until the sugar sets.
  • Roll fondant on powdered sugar-dusted surface to 1/8-inch thickness. Use a paring knife to cut out eyes, nose, and mouth for each jack-o’-lantern. Pipe leaves on each apple using an icing tube with a leaf tip attached. Switch to a small round tip to pipe vines. Attach eyes, nose, and mouth to each apple using icing, then allow them to set.
