Jack-o'-Lantern Gelatin

Surprise your loved ones with a spooky, whipped fruit dessert for Halloween.
Ingredients:
  • 4 large oranges
  • 2 cups apple juice, chilled
  • 1/4 cup red cinnamon candies
  • 1 (3-oz.) pkg. Jell-O™ orange or lemon-flavored gelatin
  • 1/2 cup whipped topping
Instructions:
  • Remove the "lid" from the stem end of each orange and discard. Carefully scoop out the flesh of each orange, being cautious not to puncture the peel, leaving a 1/4 inch border. Set aside the orange flesh for later use. Place the empty orange shells on a cookie sheet or tray.
  • In a small saucepan, mix 1 cup of apple juice with cinnamon candies. Cook on medium-high heat until candies melt and mixture boils, stirring constantly. Take off the heat. Add gelatin and stir for at least 2 minutes until fully dissolved. Mix in the remaining 1 cup of cold apple juice. Pour the mixture evenly into orange shells and refrigerate for 4 hours.
  • Using a small sharp knife, carve out jack-o'-lantern features on the side of each orange. Gently peel off the skin to expose the gelatin underneath. If the gelatin is stuck, dampen a paper towel with hot water, squeeze out excess water, and press it on the features to soften the gelatin before removing the peel.
  • Top each dessert with a generous dollop of whipped topping and, if desired, a sprinkle of cinnamon for added flavor.
