Jack-o'-Lantern Pizza

Pizza topped with fun jack o’ lantern veggie faces - a kid-friendly twist on veggies!
Ingredients:
  • 1 pound lean ground beef
  • 1 cup salsa
  • 3/4 frozen corn
  • 1/4 cup water
  • 2 cups Original Bisquick™ mix
  • 1/3 cup very hot water
  • 1 tablespoon vegetable oil
  • 2 cups shredded Colby-Monterey Jack or Cheddar cheese (8 ounces)
  • Toppings, such as orange and green bell pepper strips, sliced ripe olives and cherry tomato wedges, if desired
Instructions:
  • Preheat the oven to 450°F and place the oven rack on the lowest position. Grease a 12-inch pizza pan. In a 10-inch skillet, cook the beef over medium heat until browned, stirring occasionally. Drain the excess fat. Add salsa, corn, and 1/4 cup water. Bring to a boil, then remove from heat.
  • Combine Bisquick, 1/3 cup hot water, and oil until a soft dough forms, then beat vigorously 20 strokes. Allow it to rest for 5 minutes. Press the dough onto a pizza pan using Bisquick-dipped fingers, pinching the edges to create a 1/2-inch rim. Spread the beef mixture over the dough and sprinkle with cheese.
  • Bake for 11 to 15 minutes until the crust is golden brown and the cheese is melted. Use the toppings to create jack-o’-lantern faces on the pizza.
