Chocolate drizzled orange madeleines are a delightful twist on the classic French cakes, perfect for indulging at tea time or as a sweet pick-me-up any time of day.
Ingredients:
  • 70g (1/3 cup) caster sugar
  • 1 tsp finely grated orange rind
  • 1 egg
  • 75g (1/2 cup) plain flour
  • 2.00 gm baking powder
  • 90g butter, melted, cooled
  • 10.00 gm dark cocoa powder
  • Icing sugar mixture, to dust
  • Melted dark chocolate, to drizzle
Instructions:
  • Preheat your oven to 180C/160C fan forced. Brush twelve 40ml madeleine pans with melted butter, then dust with flour and shake off any excess.
  • Beat sugar, rind, and egg with electric beaters until pale and creamy, about 2 minutes. Sift in flour and baking powder, then drizzle butter into orange mixture. Fold with a spatula until just combined.
  • Divide the batter in half and transfer one portion to a different bowl. Sift cocoa powder over the batter and gently stir until mixed. Spoon the cocoa batter into one side of the madeleine pans, creating a slight angle by resting the pan on a chopping board. Spoon the remaining batter into the pan.
  • Bake the madeleines for 8-10 minutes until they spring back when lightly pressed in the center. Let them cool slightly in the pan before transferring to a wire rack to cool completely. Finish by dusting with icing sugar and drizzling with chocolate.
