Spicy jalapeño popper soup with creamy cheese, crispy bacon, and a hint of heat in a one-pot meal.
Ingredients:
  • 4 slices bacon
  • 1 tablespoon butter
  • 3 jalapeno peppers, diced
  • 2 teaspoons minced garlic
  • 3 cups chicken broth
  • 1 teaspoon dried cilantro
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon onion powder
  • 4 boneless, skinless chicken thighs, diced
  • 1 (8 ounce) package cream cheese
  • 0.5 (8 ounce) package shredded Cheddar cheese, divided
  • 0.25 cup heavy cream
Instructions:
  • Cook thick-cut bacon slices in a large skillet over medium-high heat, turning occasionally, until perfectly browned, for approximately 10 minutes. Place on paper towels to drain.
  • As bacon sizzles, melt butter in a pot over medium-high heat. Saute jalapeños and garlic until tender, about 3 to 4 minutes. Stir in chicken broth, cilantro, Cajun seasoning, and onion powder, scraping up any flavorful bits from the bottom of the pot. Bring to a boil, then gently add chicken. Let it simmer for 10 to 15 minutes until perfectly cooked.
  • Combine the cream cheese, the majority of the Cheddar cheese, and the heavy cream in a saucepan. Simmer gently, stirring occasionally, until the cheese has melted, approximately 5 minutes. Season with salt and pepper to taste.
  • Sprinkle remaining cheddar over the soup and crumble the bacon on top.
