Jalapeno corn dip

Sweet corn mixed with flavorful herbs and spices creates a delicious appetizer.
Ingredients:
  • 10g butter
  • 3 spring onions (shallots), thinly sliced
  • 1 fresh jalapeno chilli, finely chopped
  • 1 garlic clove, finely chopped
  • 2.50 gm sweet paprika
  • 4 sweet corn cobs, kernels removed
  • 40.00 gm water
  • 37.60 gm light sour cream
  • 20.00 ml chopped fresh coriander
  • Organic corn chips, to serve
Instructions:
  • In a non-stick frying pan over medium heat, warm the butter and oil until sizzling. Add spring onion, chili, garlic, and paprika, stirring occasionally, until fragrant and softened, about 2 minutes.
  • Toss corn kernels for 1 minute until coated. Season with salt, then pour in water. Cover and cook for 4 minutes until corn is tender, stirring occasionally. Let cool before serving.
  • Place the corn mixture in a food processor, setting aside 3/4 cup. Blend in the sour cream until nearly smooth. Move the mixture to a bowl, then fold in coriander and the reserved corn. Enjoy with corn chips.
