Cheesy, spicy, and creamy bite-sized appetizers combining the best of stuffed mushrooms and jalapeno poppers.
Ingredients:
  • 2 slices bacon
  • cooking spray
  • 1.5 teaspoons olive oil
  • 8 mushrooms, stems removed and chopped and caps reserved
  • 1 clove garlic, minced
  • 1 jalapeno pepper, ribs and seeds removed, finely chopped
  • 1 (3 ounce) package cream cheese, softened
  • 3 tablespoons shredded Cheddar cheese
  • sea salt to taste
  • ground black pepper to taste
Instructions:
  • Cook the bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes, turning occasionally. Drain on a paper towel-lined plate, crumble, and set aside.
  • Preheat your oven to 350°F (175°C) and lightly coat a baking dish with cooking spray.
  • In a skillet heated over medium heat, sauté mushroom stems, garlic, and jalapeno in olive oil until mushrooms soften and release moisture, about 10 minutes. Combine mushroom mixture with cream cheese, cheddar cheese, and bacon in a bowl. Season with salt and pepper. Fill mushroom caps generously with the cheese mixture, then place on a baking dish.
  • Bake until the cheese is golden brown, about 15 to 20 minutes in the preheated oven.
