Elevate your party with vegan jalapeño poppers, stuffed with savory mushrooms for a meaty twist.
Ingredients:
  • 12 medium jalapeno peppers, sliced in half and seeded
  • 1 tablespoon vegetable oil
  • 1 (8 ounce) package button mushrooms, finely diced
  • 0.5 cup finely diced onion
  • 2 cloves garlic, minced
  • 1 (8 ounce) tub vegan cream cheese substitute, softened
  • 1 cup vegan shredded cheese substitute, divided
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and arrange jalapeño halves, cut side up, on a foil-lined baking sheet.
  • In a skillet over medium-high heat, sizzle mushrooms, onion, and garlic in vegetable oil until tender and the mushrooms have released their juices, approximately 8 minutes. Drain on a paper towel-lined plate to absorb any extra moisture.
  • Combine the mushroom mixture, dairy-free cream cheese, 3/4 cup of dairy-free shredded cheese, salt, and pepper in a bowl. Fill the jalapeño pepper halves on the baking sheet with the mixture.
  • Place in the oven and bake for 20 minutes until golden brown.
  • After taking it out of the oven, sprinkle the remaining 1/4 of the shredded cheese substitute on top. Broil for 1 to 2 minutes until the cheese is melted and slightly browned.
