Vegan Jalapeno Cornbread in the Air Fryer

Vegan jalapeno cornbread made crispy in an air fryer.
Ingredients:
  • 1 tablespoon flaxseed meal
  • 3 tablespoons water
  • cooking spray
  • 1 cup stone-ground yellow cornmeal
  • 0.66666668653488 cup all-purpose flour
  • 0.25 cup nutritional yeast
  • 2.25 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 cup unsweetened almond milk
  • 0.33333334326744 cup vegetable oil
  • 1 large jalapeno pepper, seeded and minced, or to taste
Instructions:
  • Mix water and flaxseed meal in a small bowl, then let it sit for 10 minutes.
  • Preheat the air fryer to 350 degrees F (175 degrees C) as per manufacturer's instructions, then coat a 6-inch heat-proof inner pot with cooking spray.
  • In a medium mixing bowl, mix cornmeal, flour, nutritional yeast, sugar, baking powder, salt, and pepper. Add the flaxseed and water mixture, almond milk, and oil; stir until smooth. Mix in jalapeno and pour into the prepared pot for the air fryer.
  • After air frying the cornbread for 15 minutes, use tongs to carefully flip it in the inner pot. Continue air frying until a toothpick inserted into the center comes out clean, about 5 more minutes. Serve warm.
