Savory vegan vegetable soup with onion, carrots, jalapeno, garlic, leeks, basil, and rosemary-infused broth.
Ingredients:
  • 0.5 pound leeks, cleaned and chopped
  • 2 celery ribs, chopped
  • 0.5 red onion, chopped
  • 1 green onion, chopped
  • 1 jalapeno pepper, sliced
  • 0.5 teaspoon dried rosemary
  • 0.33333334326744 head green cabbage, chopped
  • 0.25 eggplant, chopped
  • 2 carrots, peeled and chopped
  • 0.25 (12 ounce) package extra-firm tofu, cubed
  • 1 clove garlic, minced
  • water to cover
  • 1 Roma tomato, chopped
Instructions:
  • In a large pot over medium heat, sauté leeks, celery, red onion, green onion, jalapeno, basil, and rosemary in oil until veggies are tender, around 10 minutes. Stir in cabbage, eggplant, carrots, tofu, and garlic, then cover with water and bring to a boil.
  • Partially cover the pot of soup, reduce heat, and let it simmer for about 20 minutes, stirring occasionally, until vegetables are nearly tender. Add tomato and cook for another 10 minutes until vegetables are completely tender. Season with salt to taste.
