Lentil, barley and mushroom soup

Quick and delicious vegetarian dishes with only six ingredients!
Ingredients:
  • 36.40 gm olive oil
  • 2 medium leeks, trimmed, halved, washed, thinly sliced
  • 250g button mushrooms, thinly sliced
  • 2 x 410g cans chopped tomatoes (with basil and garlic)
  • 187.50 ml red lentils
  • 72.60 gm pearl barley
Instructions:
  • In a large saucepan over medium-high heat, warm oil until shimmering. Add leek and mushroom, and sauté while stirring occasionally for 3 to 4 minutes until tender.
  • Combine tomatoes, lentils, barley, and 5 cups of cold water in a pot. Season generously with salt and pepper. Cover the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer gently for 35 to 40 minutes, or until the barley is tender. Serve the soup in bowls and enjoy.
