Try this quick and flavorful jambalaya made with kielbasa sausage using orzo pasta for a delicious twist!
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 pound fully cooked kielbasa, cubed
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon dried thyme
  • 3 dashes hot sauce
  • 1.5 cups orzo pasta
Instructions:
  • In a large, deep skillet, warm some olive oil over medium heat. Cook and stir onion and green bell pepper until tender, about 5 to 8 minutes. Add garlic to the vegetables and cook until fragrant and softened, around 2 minutes.
  • Combine kielbasa sausage, tomatoes with their juice, water, paprika, oregano, thyme, and hot sauce with the onion mixture. Bring to a boil, then add the orzo. Simmer covered on low heat for about 10 minutes until the orzo is tender.
