Fluffy vanilla cake roll with a delicious jelly filling - a simple and irresistible treat.
Ingredients:
  • 4 large eggs, at room temperature
  • 1 teaspoon salt
  • 1.5 cups superfine sugar
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1.5 cups cake flour
  • 0.25 cup powdered sugar, or as needed
  • 1 cup jelly, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and line a 10x15-inch jelly roll pan with parchment paper.
  • First, carefully separate the eggs and place the yolks aside. Next, whisk the egg whites with salt in a glass, metal, or ceramic bowl until they become foamy. Slowly add the sugar while continuing to beat until soft peaks form. Finally, sprinkle baking powder over the mixture and beat to incorporate.
  • Add the egg yolks one by one, beating thoroughly each time. Mix in the vanilla extract. Gently sift 1/2 cup of cake flour over the egg mixture and fold in. Repeat twice more with the remaining flour. Spread the batter evenly in the prepared pan.
  • Bake until the cake springs back when gently pressed with a finger, for 10 to 13 minutes in the preheated oven.
  • Place a kitchen towel on a surface and generously dust with powdered sugar. Remove the cake from the oven and promptly flip it out onto the towel.
  • Peel off parchment paper and neatly trim cake edges for a flawless roll. Smooth jelly over the cake. Gently roll the cake from a short end with the help of the towel. Place the rolled cake on a serving plate with the seam side down. Allow to cool completely for about 45 minutes before slicing and serving.
