Strawberry sponge finger slice

Elevate your afternoon tea with Jane Charlton's light and fluffy strawberry sponge finger slice.
Ingredients:
  • 250g strawberry
  • 40.00 gm caster sugar
  • 185ml (3/4 cup) strawberry flavoured topping
  • 1 250g container mascarpone
  • 1 egg
  • 80ml (1/3 cup) hot water
  • 12 savoiardi sponge finger biscuits
Instructions:
  • Mix together the strawberries, 1 tablespoon of sugar, and strawberry topping. Toss well and set aside. In a bowl, use an electric beater to whip mascarpone, egg, and the remaining sugar until firm peaks form.
  • In a saucepan over medium heat, combine water and 125ml (1/2 cup) of strawberry topping. Stir and simmer for 1-2 minutes until warmed.
  • 1. Line a 12 x 22cm loaf pan with plastic wrap, leaving an overhang. Place 6 sponge fingers in a single layer at the base of the pan. Drizzle half of the warm strawberry syrup over the biscuits, then layer with half of the strawberry slices, pressing down gently with the back of a spoon. Spread half of the mascarpone mixture over the strawberries. 2. Repeat with another layer of biscuits, syrup, and mascarpone. Press down gently and smooth the surface. 3. Cover with plastic wrap and chill in the fridge for 10 minutes before serving.
  • Carefully transfer the slice onto a plate using plastic wrap. Cut into slices and serve immediately, drizzled with the remaining syrup.
