Ingredients:
  • 300ml thickened cream
  • 20.00 gm caster sugar
  • 8 savoiardi (sponge finger biscuits)
  • 60ml malibu
  • 500ml custard
  • 250g strawberries, washed, hulled, sliced
  • 2 nectarines, sliced
Instructions:
  • Whisk the cream and sugar until soft peaks form.
  • Tear the biscuits into small chunks and distribute evenly into 4 serving glasses. Pour a generous amount of coconut liqueur over the biscuits. Top with a dollop of creamy custard.
  • Sprinkle some of the fruit on top, saving a bit for garnish. Dollop the whipped cream on top. Chill in the refrigerator for 1 hour.
  • Garnish with the saved fruit and enjoy.
