Budget-friendly coconut slice, ideal for kids' parties or school events.
Ingredients:
  • 300.00 gm icing sugar
  • 340.00 gm desiccated coconut
  • 395g can sweetened condensed milk
  • 60g strawberries, quartered
  • 2 tsp strawberry extract
  • Red food colouring
Instructions:
  • Prepare a 21cm Coles cook&dine square cake pan by greasing it and lining the base and 2 long sides with baking paper, ensuring the paper overhangs the sides.
  • Combine 1 cup of sugar and 2 cups of coconut in a large bowl. Mix in vanilla and two-thirds of the condensed milk. Press the mixture into the prepared pan using slightly wet hands.
  • Mash the strawberries with a fork in a large bowl until they're nearly smooth. Stir in the strawberry extract, a few drops of food coloring, the rest of the sugar, coconut, and condensed milk. With slightly damp hands, press the mixture into the pan. Refrigerate overnight until firm. Cut into pieces.
