Strawberry Ice Cream Dessert

Strawberry ice cream nestled between coconut-pecan rice cereal treats, perfect mini summer sandwiches.
Ingredients:
  • 1 cup butter
  • 4 cups crispy rice cereal (such as Rice Krispies®)
  • 1 cup brown sugar
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 0.5 gallon strawberry ice cream, softened
Instructions:
  • In a large saucepan, gently melt the butter over medium-low heat until smooth; then take it off the heat. Mix in rice cereal, brown sugar, coconut, and pecans until fully combined. Press half of the cereal mixture firmly into a 9x13-inch baking pan.
  • Arrange luscious ice cream slices over the cereal mixture, then add a second layer of cereal mixture on top.
  • Freeze until firm, approximately 1 hour. Cut into squares just before serving.
