Strawberry yoghurt ice-cream

Whip up creamy strawberry fro-yo without an ice-cream maker!
Ingredients:
  • 1 egg white
  • 2 x 200g tubs Low Fat Strawberry Yoghurt
  • 250g (2 cups) fresh mixed berries or thawed frozen mixed berries, finely chopped
Instructions:
  • In a clean, dry bowl, use an electric beater to whip the egg white and sugar until soft peaks form.
  • Mix the yogurt and berries together in a small bowl. Fold into the egg white mixture using a large metal spoon until just combined.
  • Transfer the mixture to a shallow metal container, cover tightly with foil, and freeze for about 4 hours, or until it's nearly firm.
  • Break up the ice-cream using a large metal spoon. Transfer to a big bowl and beat with an electric mixer until smooth.
  • Return the mixture to the metal container promptly, cover it with foil, and freeze for an additional 4 hours or until firm. Scoop into bowls and serve right away for a delightful treat.
