Fruity yoghurt pops

Beat the heat with refreshing fruity popsicles this summer!
Ingredients:
  • 200g strawberries, hulled, chopped
  • 200g yoghurt
  • 60ml pineapple juice
  • 320g rockmelon, deseeded, peeled, chopped
Instructions:
  • Blend the strawberries until smooth, then pour the mixture into 8 popsicle molds each holding 1/3 cup. Freeze for 40 minutes.
  • In a jug, mix together the yogurt and pineapple juice until smooth. Pour the mixture evenly over the strawberry layers. Freeze for 40 minutes. Insert popsicle sticks halfway into each mold and freeze for an additional 10 minutes.
  • Add the rockmelon to a blender and blend until smooth. Pour the mixture over the yoghurt layers. Adjust the popsicle sticks if needed. Freeze for at least 4 hours. When ready, gently squeeze the molds and pull out the yogurt popsicles using the sticks.
