Try these refreshing nectarine yogurt popsicles for a fruity summer delight.
Ingredients:
  • 4 ripe white nectarines, stones removed, coarsely chopped
  • 30.00 gm caster sugar
  • 500g ctn reduced-fat vanilla yoghurt
Instructions:
  • In a saucepan over medium-low heat, simmer the nectarine with sugar and ¼ cup (60ml) water until the nectarine is very tender, about 10-12 mins. Allow it to cool off the heat before using.
  • Blend the nectarine mixture in a food processor until smooth. Divide the mixture evenly among eight 1/2-cup (125ml) ice-block moulds. Layer half of the yoghurt on top. Repeat with the remaining nectarine mixture and yoghurt. Insert sticks, freeze for 6 hours, then unmould and serve promptly.
