Nectarine and macaroon slice

Whip up a delightful nectarine and macaroon slice for impromptu guests!
Ingredients:
  • 500.00 ml plain flour
  • 161.25 gm caster sugar
  • 125g butter, chilled, chopped
  • 2 egg yolks
  • 4.40 gm vanilla essence
  • 850g nectarine
  • 2 egg whites
  • 107.50 gm caster sugar
  • 65.00 gm shredded coconut
  • 85.00 gm desiccated coconut
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan that is 3cm deep. Line the base and sides with baking paper, making sure to extend the paper 2cm above the edge of the pan on all sides.
  • Combine flour, sugar, and butter in a food processor until mixture resembles fine crumbs. Add egg yolks and vanilla, then pulse until dough forms a ball. Press dough evenly into the prepared pan and chill for 30 minutes before proceeding.
  • Bake the base until light golden, about 20 minutes. Allow to cool in the pan for 15 minutes, then layer the nectarine slices slightly overlapping on top.
  • In a bowl, whisk together eggs, egg whites, and sugar until the sugar has dissolved. Fold in the coconut. Spread the mixture over the nectarine and bake for 35 to 40 minutes until golden. Let it cool in the pan before cutting into pieces. Serve as desired.
