Elevate classic strawberry ice cream with a simple and affordable balsamic twist that everyone will love.
Ingredients:
  • 400g strawberries, hulled, quartered, plus extra to serve
  • 60ml balsamic vinegar
  • 100g icing sugar
  • 500ml thickened cream
Instructions:
  • Combine strawberries and vinegar in a bowl and let them sit for 20 minutes to macerate. Then, blend the mixture in a food processor with sugar until smooth. Refrigerate the mixture in a covered bowl for 2 hours.
  • Whip cream until stiff peaks form, gently fold into strawberry mixture. Transfer to a shallow container and freeze until edges are firm. Beat with an electric mixer. Return to container and freeze. Repeat 2-3 times. Alternatively, use an ice-cream machine per manufacturer's instructions.
  • Top the ice-cream with fresh strawberries and a balsamic drizzle.
