Balsamic strawberry ice cream - a creamy, magical delight.
Ingredients:
  • 1L vanilla ice cream
  • 280ml balsamic vinegar
  • 1 punnet strawberries, halved
  • 40.00 gm caster sugar
Instructions:
  • Let the ice cream sit at room temperature for 30 minutes to soften.
  • In a saucepan, gently simmer 1 cup (250ml) of balsamic vinegar over medium-low heat until it reduces to about 100ml (5 tablespoons). Let it cool before using.
  • Combine the vanilla ice cream and reduced balsamic vinegar in a food processor until mixed, then transfer the mixture back to its container and freeze until firm. You can also place the mixture in a decorative mould if preferred.
  • Macerate strawberries by tossing them in sugar in a bowl one hour before serving.
  • Before serving, generously drizzle the strawberries with the remaining balsamic vinegar to create a sweet and tangy sauce that beautifully complements the strawberry juices. Serve the luscious strawberries and their sauce alongside slices or scoops of creamy ice cream for a delightful and indulgent dessert.
