Macerated strawberry parfait

Ingredients:
  • 750g (3 punnets) strawberries, halved
  • 24.00 gm icing sugar
  • 80ml frangelico
  • 12 Italian sponge finger biscuits (Savoiardi), chopped
  • 260g yoghurt
Instructions:
  • Mix together the strawberries, icing sugar, and Frangelico. Let it sit, stirring every 10 minutes, for 30 minutes.
  • Layer the biscuits, strawberries, and yogurt twice in four serving glasses.
  • Chill in the fridge for 1 hour or until ready to use.
