Strawberry cream filling with puree and macerated strawberries for a dreamy bite.
Ingredients:
  • 2 cups quartered fresh strawberries
  • 1 tablespoon white sugar
  • 0.5 cup white sugar
  • 2 cups heavy cream
  • 0.25 teaspoon pure vanilla extract
  • 0.25 cup freshly squeezed lemon juice
  • 0.66666668653488 cup diced fresh strawberries
Instructions:
  • Make strawberry puree: Combine quartered strawberries and sugar in a 2-cup liquid measure or bowl. Allow mixture to sit for 1 hour, stirring every 10 to 15 minutes. Use an immersion blender to create a smooth puree. Strain through a mesh strainer to remove seeds, if preferred. Refrigerate until ready to use.
  • In a saucepan, whisk together sugar and cream over medium-high heat until just boiling. Be attentive to prevent boiling over. Reduce heat to medium-low and simmer gently for 5 minutes.
  • Take off the heat and mix in vanilla, lemon juice, and 1/3 cup of the saved strawberry puree until well combined. Allow to cool for 10 to 15 minutes.
  • Once the cream has cooled, divide the rest of the strawberry puree evenly among 4 dessert glasses.
  • Pour the chilled cream mixture into the glasses, cover with plastic wrap, and refrigerate until fully chilled, which should take 3 to 4 hours.
  • Prepare the topping by combining diced strawberries and sugar in a bowl. Cover with plastic wrap and chill along with the strawberry dreams.
  • Before serving, take the strawberry dreams and topping out of the fridge. Give the topping a quick stir and generously spoon strawberries and their juices over each dream.
