Lime-Kiwi Cloud with Strawberry Sauce

Dreamy strawberry parfait with yogurt, whipped topping, and angel food cake layers.
Ingredients:
  • 1 large angel food cake, cut into 1-inch cubes (about 12 cups)
  • 2 containers (6 oz each) Yoplait® Thick & Creamy vanilla yogurt
  • 2 teaspoons grated lime peel
  • 1/4 cup fresh lime juice (2 medium)
  • 1 container (8 oz) Cool Whip lite frozen whipped topping, thawed
  • 6 kiwifruit, peeled, sliced
  • 2 packages (10 oz each) frozen strawberries in syrup, thawed
  • 2 teaspoons cornstarch
Instructions:
  • Place half of the cake cubes into a 13x9-inch (3-quart) glass baking dish without greasing it.
  • Combine yogurt, freshly grated lime zest, and lime juice in a large bowl until fully incorporated, then gently fold in the whipped topping.
  • Spread half of the mixture over the cake cubes in the baking dish, pressing down to create a smooth layer. Top with kiwifruit slices. Repeat with another layer of cake and yogurt, pressing down gently. Cover and refrigerate until set for at least 3 hours.
  • After draining the strawberries, set them aside and pour the reserved liquid into a 2-quart saucepan. Mix in cornstarch until smooth, then bring to a boil over medium heat while stirring continuously. Take off the heat and let it cool for 15 minutes. Add the strawberries back in and refrigerate until cold, for at least 30 minutes.
  • Cut the dessert into squares and place on individual dessert plates. Spoon the sauce over each serving and store in the refrigerator.
