Boozy popsicles are a cool treat for grown-ups in the summer heat.
Ingredients:
  • Grated zest of 2 limes, plus 2 tsp lime juice
  • 110g caster sugar
  • 1/2 small pineapple, peeled, cored, sliced
  • 1/4 honeydew melon, peeled, sliced
  • 1/4 rockmelon, peeled, sliced
  • 2 kiwifruit, peeled, sliced
  • 395g can sweetened condensed milk
  • 60ml limoncello
  • 1 lime, zested
  • 125ml lime juice
Instructions:
  • Mix all the ingredients gently in a bowl. Fill 12 ice-block moulds and freeze for 1-2 hours until slightly firm. Insert a popsicle stick in each mould and freeze for at least 2 hours or overnight until completely firm.
  • Combine lime zest, sugar, and 1/2 teaspoon salt in mortar and pestle or mini food processor, and pound or blend until mixed.
  • To plate, dip the mould bases in warm water and gently slide out the popsicles. Arrange the fruit on a platter and drizzle with lime juice. Serve the popsicles promptly alongside the fruit, topped with sugared zest for an extra touch of flavor.
