Prepare homemade limoncello in advance for spontaneous gatherings during the holiday season. Start at least 1 month in advance.
Ingredients:
10unwaxed lemons
750ml vodka
550g caster sugar
Prosecco or other sparkling wine (optional), to serve
Instructions:
Peel the lemons with a vegetable peeler, making sure to remove the white pith. Transfer the zest into a sterilized 1L (4-cup) jar. Pour vodka over the zest, seal the jar, and let it sit for 10 days.
In a saucepan over low heat, melt sugar in 2 cups (500ml) water, stirring until dissolved. Take off heat, strain vodka into the syrup, discarding the zest. Transfer to sterilised bottles and store in a cool, dark place for 2-4 weeks. Serve chilled or with prosecco.
