Moist kiwifruit cakes drizzled with luscious sticky syrup.
Ingredients:
  • 150g self-raising flour
  • 75g plain flour
  • 100g almond meal
  • 322.50 gm caster sugar
  • 125g butter, melted and cooled
  • 2 eggs
  • 125ml milk
  • 3 ripe kiwifruit, finely chopped
  • 1 lime, rind finely grated
  • 180ml lime juice
Instructions:
  • - Preheat the oven to 180°C. Grease a 6-cup muffin pan. In a large bowl, combine the flours, almond meal, and sugar thoroughly.
  • Combine butter, eggs, and milk, whisk together until smooth. Fold in chopped kiwifruit and dry ingredients until well combined. Divide mixture into pans. Bake for 25-30 minutes or until beautifully golden brown.
  • Allow to cool in the pan for 15-20 minutes, then gently invert onto a wire rack.
  • In a small frying pan, combine lime rind, lime juice, and sugar. Stir over low heat until the sugar dissolves. Increase heat and simmer for 8-10 minutes until slightly thickened.
  • Poke holes in the cakes with a skewer, drizzle with the syrup. Place on plates, spoon any leftover syrup from the tray. Serve warm.
