Kiwifruit, lime and coconut muffins

Delicious warm or frozen, these fruity muffins are a treat anytime.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) self-raising flour
  • 45g (1/2 cup) desiccated coconut
  • 20.00 ml finely grated lime rind
  • 90g butter, melted
  • 250ml (1 cup) buttermilk
  • 1 egg
  • 3 kiwifruit, peeled, thinly sliced crossways
  • 35g (1/2 cup) shredded coconut
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 200°C. Lightly grease eight 150ml-capacity Texas muffin pans with melted butter.
  • In a large bowl, mix together the flour, sugar, desiccated coconut, and lime rind. Create a well in the center. In a separate jug, whisk the butter, buttermilk, and egg. Pour the mixture into the well and stir until just combined.
  • Divide the mixture evenly into the pans. Garnish with kiwifruit slices and a sprinkle of shredded coconut. Bake in the oven for 20-25 minutes or until a skewer inserted in the centers comes out clean. Transfer to a wire rack to cool.
  • Sprinkle with a dusting of icing sugar before serving.
