Elevate your weekend brunch with coffee pancakes and macerated fruits.
Ingredients:
  • 1 orange, zest removed with a zester, flesh segmented
  • 100g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • Pulp of 1 passionfruit
  • 1/2 papaya, peeled, sliced
  • 250g strawberries, hulled, halved
  • 62.50 ml blueberries
Instructions:
  • Combine the zest, sugar, vanilla pod, seeds, and 300ml water in a saucepan. Heat gently until the sugar melts, then simmer for 2-3 minutes. Transfer to a dish, let it cool briefly, add passionfruit, and chill until cold.
  • Gently fold in the orange segments and any remaining fruit. Serve alongside the pancakes.
