Start your day right with these delicious pancakes for breakfast or brunch.
Ingredients:
  • 40.00 ml instant coffee
  • 200g self-raising flour
  • 4.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 20.00 gm caster sugar
  • 200g Greek Style Yoghurt, plus extra to serve
  • 200ml milk
  • 40g unsalted butter, melted, plus extra to brush
  • Fresh fruit, to serve
  • Icing sugar, to dust
Instructions:
  • Combine the instant coffee with 2 tablespoons of boiling water, then let it cool.
  • Sift together the flour, baking powder, and bicarbonate of soda into a bowl. Mix in the sugar and a pinch of salt.
  • In a separate bowl, whisk together the egg, yogurt, milk, butter, and coffee until well combined. Pour mixture into dry ingredients and gently stir until fully incorporated.
  • Preheat a non-stick frypan over medium heat and brush with a little extra melted butter. Spoon 1 tablespoon of batter into the pan for each pancake. Cook until bubbles appear on the surface, then flip and cook for another minute until golden. Keep warm under a cover while making more pancakes, brushing the pan with butter as necessary.
  • Arrange the pancakes in a stack with fresh fruit and a dollop of extra yogurt on top.
  • Sprinkle with powdered sugar to add a touch of sweetness and elegance.
