Transform your go-to coffee beverage into delectable Bisquick pancakes for a simple and indulgent breakfast.
Ingredients:
  • 1 cup milk
  • 2 eggs
  • 2 cups Original Bisquick™ mix
  • 2 teaspoons baking powder
  • 1/3 cup granulated sugar
  • 2 tablespoons unsalted butter, melted and cooled
  • 2 tablespoons instant coffee granules or crystals
  • Whipped cream, for serving
  • 1 cup packed brown sugar
  • 1/2 cup whipping cream
  • 1/4 cup unsalted butter
  • Pinch of salt
  • 2 teaspoons vanilla
Instructions:
  • Combine Bisquick mix, baking powder, and granulated sugar in a large bowl. In a separate medium bowl, whisk together melted butter, milk, eggs, and instant coffee until smooth and coffee is dissolved. Gently fold the liquid mixture into the dry ingredients until just combined, being careful not to overmix (some lumps are okay).
  • Prepare your griddle or 10-inch skillet by greasing it and heating it over medium heat. Pour 1/3 cup of batter onto the griddle and cook until the edges are dry and the surface is bubbly, approximately 3 minutes. Flip and cook for an additional 2 minutes. Continue this process until you have used all the batter.
  • In a 1-quart saucepan, combine all Caramel Syrup ingredients except vanilla. Heat over medium heat, stirring until sugar dissolves and mixture is smooth. Bring to a boil and cook until syrup thickens, about 5 to 7 minutes. Remove from heat and stir in vanilla. Syrup will thicken as it cools. If it becomes too thick, gently reheat for a few minutes on low heat until desired consistency is reached.
  • Top the pancakes with a generous dollop of whipped cream and a drizzle of caramel syrup before serving.
