Delicious caramel latte cookies with coffee flavor, caramel bits, and marshmallows.
Ingredients:
  • 1.25 cups butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 0.25 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 (11 ounce) package caramel bits
  • 1 cup chilled mini marshmallows, cut in half
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 2 to 3 baking sheets by lining them with parchment paper.
  • In a large bowl, use an electric mixer to blend together butter, white sugar, and brown sugar until creamy. Mix in eggs, cooled coffee, and vanilla extract.
  • Combine flour, baking soda, and salt in a small bowl, whisking to blend. Gently add this mixture to the egg mixture. Fold in caramel bits and marshmallow pieces.
  • Scoop heaping teaspoonfuls of dough onto the prepared baking sheets.
  • Bake until golden brown, approximately 9 minutes in the preheated oven.
