Japanese-inspired banana rice pudding topped with fluffy whipped cream - a perfectly balanced, not-too-sweet treat.
Ingredients:
  • 2 bananas
  • 1 cup milk
  • 1 cup cooked short-grain white rice
  • 2 egg yolks
  • 3 tablespoons white sugar
  • 2 tablespoons butter, melted
  • 1 pinch salt
  • 0.5 cup whipped cream
Instructions:
  • Thinly slice a half of a banana and delicately sprinkle one tablespoon of sugar on top.
  • Dice the remaining bananas and place them in a skillet over medium heat. Cook while stirring and mashing until the bananas are heated through, lightly browned, and form a cohesive ball, which should take 5 to 10 minutes. Take the skillet off the heat.
  • Combine milk, rice, egg yolks, sugar, butter, and salt in a saucepan over low heat until thickened and steamy, about 2-3 minutes. Fold in mashed bananas until fully combined and heated. Chill rice pudding until slightly cooled, around 15 minutes before serving.
  • Fold in whipped cream gently into the rice pudding until fully incorporated.
  • In a skillet over medium heat, caramelize sugared banana slices by cooking and stirring for 2 to 4 minutes. Serve over rice pudding.
