Banana pancakes with zesty lime butter syrup - a luxurious breakfast treat.
Ingredients:
  • 160g plain flour
  • 8.00 gm baking powder
  • 10.00 gm caster sugar
  • 375ml can of light and creamy evaporated milk
  • 20g unsalted butter, melted
  • 3 small ripe bananas, roughly chopped
  • 150g palm sugar, finely grated
  • 60g butter
  • 2 limes, juiced, zest cut into thin strips
Instructions:
  • Sift flour and baking powder into a medium bowl. Stir in sugar. Whisk together milk, egg, and melted butter. Fold the wet ingredients into the flour until smooth, then gently fold in the banana.
  • Preheat a small non-stick frying pan over gentle heat. Pour 1/4 cup of batter into the pan, cover, and cook until golden brown, about 30 seconds. Flip the pancake and cook for one more minute. Plate and cover to keep warm. Repeat with the rest of the batter.
  • In a small saucepan over low heat, melt palm sugar and butter together until thick and bubbling, stirring for 2 minutes. Carefully whisk in lime juice and zest (watch out for spattering), let it boil for 20 seconds, then remove from heat.
  • Top the pancakes with a scoop of ice cream and a generous drizzle of syrup.
