Japanese bolognaise with udon noodles recipe

Whip up a quick and delicious Japanese-Italian pork udon dish in just 20 minutes!
Ingredients:
  • 75g (1 ⁄4 cup) red miso paste
  • 185ml (3⁄4 cup) oyster sauce
  • 40.00 ml rice wine vinegar
  • 20.00 ml sesame oil
  • 750g pork mince
  • 40.00 ml finely grated fresh ginger
  • 4 green shallots, thinly sliced
  • 600g shelf-fresh udon noodles
  • Black or white sesame seeds, to serve
  • Finely chopped fresh red chilli, to serve
Instructions:
  • Mix together the miso paste, oyster sauce, vinegar, and 250ml (1 cup) water in a bowl until the mixture is smooth and well combined.
  • In a large frying pan or wok over medium-high heat, heat the oil. Add the pork and cook for 4 minutes until it starts to brown. Then, stir in the garlic and ginger for 1 minute. Add the miso mixture and half of the shallot, toss to combine. Reduce heat to medium and cook for 4-5 minutes until the sauce slightly thickens, stirring occasionally.
  • Warm the noodles per the instructions on the packet, then drain them.
  • Toss noodles in pan until combined, and then portion into serving bowls. Top with sesame seeds, chili, and the rest of the shallot before serving.
