Sesame seed seasoned short-grain rice, ideal Japanese side dish.
Ingredients:
  • 24.00 gm sesame seeds
  • 645g (3 cups) koshihikari rice
  • 60ml (1/4 cup) sushi seasoning
  • 20.00 gm caster sugar
  • 1.20 gm salt
  • 875ml (3 1/2 cups) water
Instructions:
  • Toast sesame seeds in a medium frying pan over low heat, stirring constantly, for 2 minutes until golden. Transfer them to a small heatproof bowl.
  • Rinse the rice in a large fine sieve under cold running water until the water runs almost clear. Let it drain for 30 minutes before using.
  • In a small bowl, combine the sushi seasoning, sugar, and a pinch of salt. Stir until the sugar is completely dissolved.
  • In a large saucepan, combine the rice and water. Bring to a boil over high heat. Cover tightly, then simmer on low heat, adjusting to a smaller burner if needed. Let it cook covered for 15 minutes. Remove from heat and let it sit covered for 10 minutes before serving.
  • Gently stir the sushi seasoning mixture into the rice using a flat-edged wooden spoon until combined, then transfer to a serving bowl.
  • Garnish the rice with a generous sprinkle of sesame seeds before serving.
