Easy homemade blueberry muffins with cornmeal for added texture, ideal for breakfast or brunch.
Ingredients:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 0.33333334326744 cup white sugar
  • 2.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup buttermilk
  • 6 tablespoons unsalted butter, melted
  • 1 egg, beaten
  • 1.5 cups fresh blueberries
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a 12-cup muffin tin.
  • Combine cornmeal, flour, sugar, baking powder, and salt in a large bowl. Add buttermilk, butter, and egg, then gently mix in the blueberries.
  • Transfer the batter into the greased muffin pan.
  • Bake in the oven until a toothpick comes out clean, about 20-25 minutes.
