Indulge in a nostalgic cheesecake slice with zesty lime jelly topping for a delightful trip down memory lane.
Ingredients:
  • 125g plain sweet biscuits, processed to fine crumbs (see note)
  • 80g butter, melted, cooled
  • 375g cream cheese, softened
  • 107.50 gm caster sugar
  • 4.40 gm vanilla essence
  • 200ml cream
  • 40.00 gm boiling water
  • 6.00 gm powdered gelatine
  • 85g Original Lime jelly crystals
Instructions:
  • Prepare a 3.5cm deep, 16cm x 26cm slab pan by lining the base and sides with baking paper. Mix together the biscuit crumbs and butter, then firmly press into the base of the lined pan. Chill in the refrigerator for 1 hour until set.
  • With an electric mixer, blend cream cheese, sugar, and vanilla until creamy. Slowly mix in cream. In a small bowl, pour water and sprinkle gelatine over it. Stir until gelatine dissolves. Let it cool slightly. Then, incorporate gelatine into the filling mixture until well combined.
  • Spread the luscious filling evenly over the buttery base. Chill in the refrigerator for 3 to 4 hours until perfectly firm and set.
  • Prepare the jelly according to the package instructions and let it cool to room temperature. Once cooled, pour it into a shallow dish and refrigerate for 2 to 3 hours until it thickens to the consistency of thickened cream. Pour the jelly over the cheesecake and refrigerate for an additional 3 hours until the jelly sets. Cut into squares and serve.
