Vibrant corn salad with black beans, creamy feta, and zesty green onions is a hit for any occasion.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can shoepeg corn, drained
  • 1 (8 ounce) package crumbled feta cheese
  • 4 green onions, chopped
  • 0.25 cup olive oil
  • 0.25 cup cider vinegar
  • 2 tablespoons white sugar
Instructions:
  • Combine the black beans, corn, feta cheese, and green onions in a mixing bowl.
  • In a separate bowl, whisk together olive oil, vinegar, and sugar until smooth. Drizzle the mixture over the corn and toss to coat evenly.
  • Chill the bowl with plastic wrap in the refrigerator for a minimum of 30 minutes to meld the flavors together.
