Turkey breast marinated in spicy jerk marinade with sweet brown sugar, paired with roasted sweet potatoes for a deliciously balanced meal.
Ingredients:
  • 0.5 cup diced yellow onion
  • 0.25 cup green onions, sliced
  • 6 cloves garlic, roughly chopped
  • 2 habanero peppers, seeded and chopped
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons dried thyme
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground allspice
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon cumin
  • 0.5 teaspoon freshly grated nutmeg
  • 2 limes, juiced
  • 3 tablespoons soy sauce
  • 2 tablespoons packed brown sugar
  • 2 tablespoons vegetable oil
  • 3.5 pounds boneless turkey breast
  • 1 large yellow onion, sliced
  • kosher salt to taste
  • 1 lime, cut into wedges
Instructions:
  • Prepare all ingredients.
  • In a blender or large cup if using an immersion blender, blend diced onions, green onions, garlic, habanero peppers, fresh and dried thyme, kosher salt, black pepper, allspice, cinnamon, cumin until smooth. Add lime juice, soy sauce, brown sugar, and vegetable oil; blend until smooth.
  • In a large bowl, lay the turkey breasts flat and generously coat with marinade, ensuring it's well covered. Mix the turkey breasts until evenly coated, then cover with plastic wrap and refrigerate for 4 to 12 hours.
  • Preheat the oven to 450 degrees F (230 degrees C). Place the turkey in a roasting pan, tie it with cooking twine, add sliced onions underneath and around, and season generously with salt.
  • Roast the turkey in the preheated oven for 30 minutes. Then lower the temperature to 300 degrees F (150 degrees C) and continue roasting until an instant-read thermometer inserted into the center registers at least 145 degrees F (63 degrees C), approximately 1 hour and 15 minutes more.
  • Cover gently with foil and allow to rest for approximately 20 minutes. Remove strings and serve.
