Create flavorful beef or moose jerky by marinating rump roast for 12 hours in a dehydrator for a perfect blend of smoky, savory, and sweet taste.
Ingredients:
  • 3 pounds rump roast
  • 3 cups soy sauce
  • 3 cups packed brown sugar
  • 4 fluid ounces hickory-flavored liquid smoke
Instructions:
  • Have the roast sliced into 1/4-inch thick slabs at the grocery store or butcher. Trim off the fat from the edges and cut the slabs into 1/4-inch wide, 4-inch long pencil-like strips.
  • In a large bowl, mix soy sauce, brown sugar, and hickory-flavored liquid smoke until well blended. Add all the meat to the marinade, cover the bowl, and refrigerate for at least 30 minutes.
  • Place meat strips in a food dehydrator for 12-20 hours to achieve your desired dryness. Remember to rotate trays after 6 hours to ensure even drying - move the bottom tray to the top, the top tray to the bottom, and so on.
