Savoury roasted pumpkin with crispy pumpkin seed topping – the perfect side dish for any meal.
Ingredients:
  • 1 butternut pumpkin, peeled, cubed
  • 30ml (1 1/2 tbsp) olive oil
  • 40.00 ml bought pumpkin seeds
Instructions:
  • Preheat your oven to 180°C. Coat the pumpkin cubes with 1 tablespoon of oil, then spread them on a baking tray. Toss the pumpkin seeds in the remaining oil and keep them aside.
  • Roast the pumpkin for 20 minutes until tender, then sprinkle pumpkin seeds onto the tray and continue roasting for 15 more minutes.
  • Mash the pumpkin with a touch of salt and pepper, then top off with the roasted pumpkin seeds for a delectable finish.
