Festive jewelled couscous salad, perfect for Christmas.
Ingredients:
  • 500.00 ml couscous
  • 125.00 ml dried cranberries
  • 2 tsp finely grated orange rind
  • 1 star anise
  • 1 cinnamon stick
  • 510.00 gm chicken style liquid stock
  • 86.63 gm orange juice
  • 57.20 gm honey
  • 3 small navel oranges, peeled
  • 125.00 ml chopped pistachios
  • 250.00 ml fresh coriander leaves
  • Fresh coriander sprigs, to serve
Instructions:
  • Combine couscous, cranberries, orange rind, star anise, and cinnamon stick in a large heatproof bowl. Bring stock to a boil in a saucepan over medium heat then pour over the couscous mixture. Stir, cover, and let it stand for 5 minutes. Fluff with a fork to separate grains, then remove and discard star anise and cinnamon.
  • Combine orange juice, honey, and oil in a small bowl. Mix until honey is dissolved. Season with salt and pepper. Finely chop 2 oranges and slice the remaining one. Add the chopped orange, pistachios, coriander, and dressing to the couscous mixture. Stir well to combine. Garnish with orange slices and coriander sprigs before serving.
