Moroccan-style beef with jewelled couscous recipe

Try this flavorful Moroccan beef with jewelled couscous for a delicious dinner tonight.
Ingredients:
  • 4 (about 150g each) No Added Hormones Beef Rump Steaks
  • 36.40 gm olive oil
  • 20.00 ml Moroccan seasoning
  • 250g couscous
  • 40g date
  • 40g dried apricot
  • 310ml water
  • 35g almond
  • 42.00 gm lemon juice
  • 60g pkt Baby Rocket
  • 82.50 ml mint leaves
Instructions:
  • Preheat a chargrill on medium-high heat. Massage steaks with half of the oil and generously coat with Moroccan seasoning. Grill for 3-4 minutes on each side for a perfect medium doneness or until desired doneness is achieved. Rest on a plate, tented with foil to retain heat.
  • While you wait, combine couscous, date, and apricot in a heatproof bowl. Pour in boiling water, cover with plastic wrap, and let it sit for 4-5 minutes until the liquid is absorbed. Fluff up the grains using a fork.
  • Combine the almond, lemon juice, and remaining oil with the couscous mixture, stir well to mix, and season to taste.
  • Slice the steaks thickly. Serve the couscous mixture with rocket and mint on plates, then place the steak on top.
