Moroccan-style pork with pumpkin and couscous recipe

Delicious Moroccan pork with pumpkin and couscous - a guaranteed crowd-pleaser!
Ingredients:
  • 500g pkt Diced Butternut Pumpkin
  • 1/2 large cauliflower, cut into small florets
  • 250g pkt pearl couscous
  • 4 Pork Sirloin Steaks
  • 2 tsp Moroccan seasoning
  • 80g almond
  • 100g fetta, crumbled
  • 250.00 ml coriander sprigs
Instructions:
  • Preheat your oven to 200°C and line a baking tray with baking paper. Spread out the pumpkin and cauliflower evenly on the tray. Drizzle with 2 tsp of oil, season, and toss to coat. Roast for 20-25 mins, flipping halfway through, until they are golden brown.
  • While the couscous is cooking in a large saucepan of boiling water for 8 minutes or until tender, refresh it under cold water, then drain well. Place the couscous in a large bowl and toss with 1 tablespoon of oil to combine.
  • Preheat a chargrill to medium-high heat. Mix the pork, Moroccan seasoning, and remaining oil in a bowl. Grill the pork for 3 minutes on each side or until cooked through. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Combine the pumpkin and cauliflower with the couscous mixture in the bowl containing the almonds, feta, and lemon juice. Toss everything together.
  • Transfer the couscous mixture to a large serving platter. Arrange the pork on top, sprinkle with lemon zest, and serve with coriander.
