Excite your taste buds with this delicious Moroccan-inspired chicken dish, perfect for family dinners.
Ingredients:
  • 36.40 gm olive oil
  • 8 chicken thighs on the bone
  • 1 large red onion, chopped
  • 2cm fresh ginger, peeled, grated
  • 382.50 gm salt reduced chicken style liquid stock
  • 2 oranges, rind shredded, juiced
  • 1 cinnamon stick
  • 2 zucchini, chopped
  • 125.00 ml raisins
  • 375.00 ml couscous
  • 82.50 ml coriander leaves, chopped
Instructions:
  • Heat 1 tablespoon of oil in a hot frying pan. Brown the chicken in batches for 3 to 4 minutes on each side. Transfer to a plate.
  • In the frying pan with the chicken, pour in the remaining oil, onion, and ginger. Sauté while stirring for 2 minutes. Add the stock, orange rind, 1/2 cup of juice, and cinnamon. Cover and simmer for 20 minutes until the chicken is almost fully cooked.
  • Toss in zucchini and plump raisins. Cover and let simmer for an additional 5 minutes.
  • Add couscous and stir until well combined. Cover and let it cook for another 5 minutes. Remove from heat and allow it to stand, covered, for 10 minutes. Season with your favorite spices and finish with a sprinkle of fresh coriander. Serve and enjoy!
