Make ahead and bake for an easy, comforting dinner.
Ingredients:
  • 9.20 gm olive oil
  • 1.8kg chicken, cut into 12 pieces
  • 1 brown onion, halved, cut into thin wedges
  • 3.75 gm smoked paprika
  • 2.50 gm ground cumin
  • Pinch of saffron threads
  • 1 x 400g can diced Italian tomatoes
  • 2 carrots, peeled, thinly sliced diagonally
  • 500ml (2 cups) salt reduced chicken style liquid stock
  • 1 lemon, cut into thin slices
  • 85g (1/2 cup) green olives
  • 40.00 ml chopped fresh coriander
  • 40.00 ml chopped fresh continental parsley
  • 290g (1 1/2 cups) couscous
Instructions:
  • Heat oil in a large heavy-based saucepan over medium-high heat. Cook half of the chicken pieces for 6 minutes, turning occasionally, until browned all over. Transfer to a paper towel-lined plate. Repeat with the remaining chicken.
  • Sauté the onion in the pan until soft, stirring occasionally for about 6 minutes. Stir in the garlic, paprika, cumin, and saffron, cooking until fragrant for about 1 minute. Add the tomato, carrot, and 125ml (1/2 cup) chicken stock to the pan. Simmer the mixture, scraping the bottom with a flat-edged wooden spoon to release any stuck bits. Arrange the chicken pieces on top of the tomato mixture.
  • Simmer for 45 minutes with the lid slightly ajar. Toss in lemon slices and olives, pressing the lemon slices into the sauce to soak. Simmer for an additional 30 minutes with the lid slightly ajar until the sauce thickens. Take the chicken off the heat and mix in the coriander and parsley.   • While the stock is coming to a boil, grab a saucepan. Once the stock is boiled, take it off the heat and mix in the couscous. Cover it and let it sit for 2-3 minutes until all the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  • Portion the fluffy couscous onto individual serving plates, and elegantly crown it with the succulent chicken before presenting it for a delightful dining experience.
