Moroccan-style fish with couscous, chickpeas & green olives

Boost brain and body with quick, budget-friendly spicy fish dish - ready in under 30 minutes!
Ingredients:
  • 190g (1 cup) couscous
  • 250ml (1 cup) boiling water
  • 9.20 gm olive oil
  • 1 small brown onion, halved, thinly sliced
  • 20.00 ml Moroccan Seasoning
  • 1 x 420g can chickpeas, rinsed, drained
  • 50g (1/4 cup) green olives, pitted, sliced
  • 62.50 ml shredded fresh mint
  • 500g firm white fish fillets, cut into 4cm pieces
  • Baby spinach leaves, to serve
  • Lemon wedges, to serve
  • 90g (1/3 cup) low-fat natural yoghurt
Instructions:
  • In a large heatproof bowl, gently pour in the couscous and add the boiling water. Cover and let it sit for 5 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  • In a large non-stick frying pan, warm half of the oil over medium-low heat. Sauté the onion for 4 minutes until soft. Stir in the garlic and half of the seasoning, cook for 1 minute. Add the couscous, chickpeas, and olives, and heat through. Mix in the mint and season with salt and pepper. Keep warm by covering with foil in a bowl.
  • In a bowl, mix the fish with the remaining seasoning. Heat the rest of the oil in a frying pan over medium-high heat. Add the seasoned fish and cook for 3-4 minutes, turning occasionally, until it is just cooked through.
  • Plate the spinach and couscous mixture evenly on serving plates. Place the fish on top. Serve with lemon wedges and yogurt on the side.
